4th of July Grilled Chicken Tacos with Fire-Roasted Corn Salsa
Keep it simple, fresh, and travel-friendly — no leftovers, no fuss.
What to Pack:
- Pre-marinated chicken thighs (citrus + spice works great)
- 2–3 ears of corn
- 1 red bell pepper
- 1–2 tomatoes
- ½ red onion
- Handful of fresh cilantro
- 1–2 limes
- Small pack of corn or flour tortillas
- 1 avocado
- Crumbled cotija cheese
How to Make It (TinyCamp Style):
- Grill & Slice: Toss the chicken on the grill until cooked through. Slice into taco-ready strips.
- Fire-Roast Corn: Grill the corn and pepper until slightly charred. Slice off the kernels from the corn and chop peppers.
- Salsa Time: Mix with diced tomato, red onion, chopped cilantro, and a squeeze of lime.
- Assemble Tacos: Layer tortillas with chicken, salsa, avocado slices, and cotija cheese.
4. S'mores & Sparklers
